Cold, refreshing, loaded with healthy fruit, low sugar and super easy to make dairy free if you prefer with this recipe. Of course you can use the milk of your choice.

I love making this recipe and sticking a bag of these popsicles in the freezer for those hot days (or nights) when you want a little sweet tasting treat to cool down. The beauty of this recipe is that you are in control of all the ingredients and you can avoid sugar, gluten and dairy altogether if you would like.
These popsicles are so creamy with the combination of creamed cashews and coconut milk. This is my favorite ice cream base as you neither taste the coconut or the cashews, they create a new, creamy flavorless base that is perfect to add things like fruit to. You can make them taste like anything you would like.
Plus, you can add whole, fresh fruit in your popsicles and avoid the heavy, sugar-laden corn syrup, fruit juices that are often in popsicles from the grocery store.

You can pick up some popsicle molds really inexpensively but, if you just have to make these today, you can also use some simple things around the house for a mold.
The easiest is some paper cups, small dixie cups are perfect or larger ones but don't fill them all the way up. These are easy to use because you can peel them away once they are frozen.
Other things to use would be Ice cube trays, recycled yogurt cups or a loaf pan. For the loaf pan you would wait until the pan starts to set up, then slide the popsicle sticks in to where you want your popsicle (do two side by side) and then once it freezes you remove it from the freezer and let the mold get warm enough to slide it out of the pan (or run a little hot water over the bottom to release. Then slice it down the middle and then across for each popsicle.
If you don't have popsicle sticks, substitute with a plastic spoon or a metal straw.
We did strawberries and mango in these photos but you can use any kind of fruit. Try pineapple, blueberries, raspberries or even add some matcha tea. Adding some herbs or other healthy ingredients is super easy. Now get busy and cool off quick with this recipe!

This is one of my Mom's old family recipes and she use to make it every fall as soon as the apples came into season and every Thanksgiving.

Rosehips are the fruit of the rose flower. Most people are familiar with and understand how touse rose petals but are not so familiar with rosehips.
If a rose is left on the plant and not picked, it is fertilized by pollinators and the petals will fall away. The base of the flower then swells and develops its "fruit" which will look like a pod.
It is usually a soft peach color or can be pink during the hot months but once the frost hits the fruit it becomes a beautiful crimson color. This is when the "hip" is ready to be eaten.
