Strawberry Basil Refresher

This drink reminds you that spring has arrived and more refreshing fruit drinks are on the horizon this summer.  It's easy to make, lightly sweet and looks beautiful on the table for a Mother's Day Brunch or a easy summer get together!

You can pick up all of the ingredients right at the grocery store and whip it up really quickly when your guests arrive.  This is made as a light Mocktail but you are welcome to add some sparkling wine, a little vodka or gin to elevate this to the cocktail level. 

All you need to make this favorite brunch drink is:

  • Strawberries
  • Basil
  • Lemons
  • Sweetener of choice 
  • Sparkling Water

Start by cleaning and capping. your strawberries.  I like to quarter them to make muddling easier.  Juice your lemon and clean a few basil leaves. 

Next place your strawberries in the glass or a shaker, add the basil leaves, lemon juice and sweetener.  Muddle for a minute or so until the strawberries are fairly mushy.

Pick a tall serving glass and add ice.  Then scoop out the muddled mixture into the glass and top with sparkling water.  Stir well and top off with a little more sparkling water. Add a sliced strawberry and serve!  Beautiful and delicious. 

You can split half of your sparkling water with sparkling wine or add a shot of vodka or gin if you would prefer a cocktail.

We like serving this refresher with a simple Baguette Egg Boat and a fruit salad for a quick, yummy breakfast or brunch.

Strawberry Basil Refresher Recipe

Ingredients

  • 3 Medium fresh Strawberries
  • 2-4 Fresh Basil Leaves
  • 1/2 Large Lemon Juiced (can use limes if you prefer)
  • 1-2 Teaspoons Sweetener of choice (I used Lakanto Monkfruit mix)
  • Sparkling Water (or blend with half sparkling wine)

Directions

  1. Wash and cap Strawberries, cut into quarters
  2. Rinse Basil Leaves
  3. Juice of 1/2 Large Lemon
  4. Place all into a large glass or shaker
  5. Add Sweetener & muddle for about a minute until strawberries are well crushed
  6. In a tall serving glass add some ice cubes and muddled mixture
  7. Pour some sparkling water and stir
  8. Top off with more sparkling water
  9. Add a sliced strawberry to the rim & serve

Note - If you would like just a hint of basil, after muddling, remove the crushed basil leaves and only add the strawberries to the glass.  

Feel free to exchange limes for the lemon if you prefer or a mixture of both

Of course adding sparkling wine, vodka or gin will elevate this to a cocktail.

What are rosehips?

Rosehips are the fruit of the rose flower. Most people are familiar with and understand how touse rose petals but are not so familiar with rosehips.

If a rose is left on the plant and not picked, it is fertilized by pollinators and the petals will fall away.  The base of the flower then swells and develops its "fruit" which will look like a pod.

It is usually a soft peach color or can be pink during the hot months but once the frost hits the fruit it becomes a beautiful crimson color.  This is when the "hip" is ready to be eaten.
