Nothing is better on a hot summer's day than a cold popsicle right out of the freezer! These orange creamsicles not only taste good but they are good for you with a healthy dose of vitamin C and anti-inflammatory turmeric. They are Dairy-free, refined sugar-free, vegan, and free of all chemical additives. They contain healthy fats, fruit, turmeric, honey & vanilla - super simple ingredients. You can feel good about eating these popsicles.
So many commercial popsicles contain artificial colors, artificial flavors, chemical additives and LOADS of sugar. Making your own, healthy popsicles at home gives you all of the control over which ingredients goes into them plus, endless flavor combinations - you can create the popsicle of your dreams!
Directions
1. Place cashews in a heat-proof bowl and pour boiling water over top. Cover the bowl and let them soak for 1 hour or until very soft.
2. Strain cashews, then rinse with cold water and strain again.
3. Place cashews in the vita-mixer (or blender) and add coconut milk, blend until very smooth and no bits of cashews remain.
4. Add all other ingredients and blend to incorporate.
5. Pour orange mixture into popsicle molds and freeze for at least 4 hours or overnight be sure they are frozen solid.
6. Hold the popsicle molds under running hot water for a few seconds to help them release.
7. Place in an air-tight container and store in the freezer.

Tips
Don't have popsicle molds or popsicle sticks? No problem! You can use other household items. Try one of these handy items you might have around the house.
When using one of the above options, place foil or plastic wrap over-top of the container and then slide your popsicle stick thru it to hold in place. I find it's easier to have the molds on a cookie sheet when placing or removing from the freezer.
Don't have popsicle sticks? No Problem, try one of these alternatives:
Blending- A high-speed blender, like a vita-mixer or Blend Tec is best when making these but not required. If you have a regular blender and can't get all of the cashews to blend in, you can strain the milk before adding the other ingredients. Of course if you don't mind it a little chunky, just leave them in.
